STEAMED SEA BASS WITH SOYA SAUCE – Cá chẽm chưng tương

Ingredients:

– 200g sea bass fillets

– 1 tablespoon of yellow bean

– ½ -1 tablespoon of oyster- flavored sauce

– 1- 2 teaspoons of sugar

– 15g of chopped ginger

– 1 teaspoon of chopped garlic

– ½ – 1 teaspoon of caramel syrup

– 1 small cup of water or pork stock

– 1- 2 tablespoons of cooking oil

– ½ -1 teaspoon of pork powder

– ½ teaspoon of pepper

– Coriander

– 1- 2 teaspoons of cornstarch

– 1 small white onion (cut into segment)

– Spring onion (cut into some parts about 3 cm)

Preparation:

– Caramel syrup: heat 1 tablespoon of cooking oil and 1 tablespoon of sugar in a pan. Stir it until golden brown. Remove from the heat.

– Constarch: dissolved in 1 tablespoon of water.

Practice:

    – Sea bass: clean and scale

    – Heat oil in the pan, add garlic and stir-fry until fragrant. Season to taste with pork stock, yellow bean, oyster-flavored sauce, caramel syrup, sugar, pork powder and ginger. Then stir for 2 – 3 minutes.

    – Stir and bring to the boil. Add fish and simmer it for 5 – 7 minutes. Then add cornstarch solution and cook, stirring, until sauce boils and thickens.

    – Add white onion, spring onion and cook for 1 minute.

    – Transfer the fish to a serving dish and garnish with coriander and a pinch of pepper.
